When Rebecca Farrington-Turner said she’d cook us a meal to remember, I was confident she would. Why? Because (hands up here) she and her husband Robin Turner are old friends—indeed, I occasionally consult Robin when it comes to the latest in fishing and seafood news. Moreover, we’ve dined with the couple before—we once had a memorable meal at their Newlyn house where we compared fresh lobster and locally caught crawfish. How many people can say they’ve had a supper like that?

But this was the first time we’d used their professional services—by which I mean the service Indulgence Catering has been offering to people staying down West Cornwall way for the past decade.

Cornwall food experiences, private chefs in Cornwall, and local Cornish produce are increasingly sought after—and Rebecca and Robin have perfected the formula.

“What we’ve found is that when people come down this far West and stay somewhere as lovely as this, they’re often reluctant to go out to supermarkets to buy ingredients and, likewise, they might not want to have to go out to a restaurant,” says Rebecca. “So, we organise some meals with them before they come down by sending off some sample menus. They choose what they want and let us know in advance. When they get here, we come and cook and then clear and wash up and then leave.

“We bring all the ingredients and cook for them on the spot. In a property like the Fallen Angel there’ll be just two guests, so they’ll be literally a metre away while we are cooking—which means we can talk about the local provenance of the food, which a lot of people are interested in.

“We work almost entirely with local ingredients. Robin is a well-known figure in the Cornish fishing industry so he has access to amazingly fresh seafood, which of course people like to enjoy when they come here.

“Imagine staying here and seeing the trawlers coming in and out of Newlyn harbour just around the corner—you’re almost bound to want to try the fresh fish and shellfish.”

Health-Focused Food Made With Love and Local Produce

Recently Rebecca passed exams to become a fully qualified health coach, so most things offered by Indulgence Catering tend to have a healthy theme.
“Of course our clients want the food to be really good, but also it’s also important that it’s healthy. So we don’t use processed food—everything is made from scratch.”

I’ll be spending some time in the kitchen with Rebecca later in the year to learn about the kind of food that’s good for your gut-biome etc. In the meantime, she was kind enough to give me a recipe for her delicious crab cakes, which are one of the favourite items on the Indulgence Catering menu…

Recipe: Indulgence Catering’s Cornish Crab Cakes with Katsu Curry Sauce

A Delicious West Cornwall Dish to Make at Home

Ingredients

For the crab cakes

  • 500g pot of white crabmeat

  • 500g mashed potato

  • 1 red chilli

  • handful chopped coriander

  • 2 tbsp chopped spring onion

  • 2 eggs

  • plain flour

  • Panko breadcrumbs

For the katsu curry sauce

  • 1 tbsp oil

  • 1 onion, diced

  • 3 garlic cloves, chopped

  • 1 tbsp chopped fresh ginger

  • 1 or 2 tbsp mild curry powder

  • 2 tbsp plain flour

  • 2 tbsp honey

  • 2 tbsp soy sauce

  • ½ litre vegetable stock

  • 200ml coconut milk

Method

  1. Make the crab cakes:
    Place the crab cake ingredients in a bowl and mix well. Season with salt and pepper. Roll into ten individual balls and flatten to make crab cakes.
    Lightly beat the eggs and place in a bowl. Put the breadcrumbs and plain flour into separate bowls. Coat each crab cake first in the flour, then egg wash, then breadcrumbs. Set aside.

  2. Make the curry sauce:
    Heat oil in a pan and add onion, garlic and ginger. Cook until softened.
    Add curry powder and cook for a minute before adding the flour.
    Slowly add the stock, stirring constantly to avoid lumps. Add the coconut milk and cook for around 5 minutes.
    Add honey and soy sauce. Taste and season as necessary.

  3. Fry the crab cakes:
    Shallow fry the crab cakes in hot oil until golden brown.

  4. To serve:
    Pour the curry sauce into a bowl and place crab cakes on top. Garnish with finely chopped spring onion, carrot, and radish.
